Yes, tonight I have nothing overly spectacular to write about, so I'm going to write about cheese.

A couple weeks back, I was at a client's home doing a computer set-up. It came time for me to need to eat, and I mentioned to my driver that I needed to get some food. The client offered to make me a couple of sandwiches instead. I took him up on the offer. This is when I was introduced to some of the most incredible cheese I've ever had. Lately I've been really into spicy things, and the spicier the better. So, I was excited when I found out that they had pepperjack cheese for my sandwich. Then, I found out about my newest favorite, chipotle. It's got a great spicy kick, and tastes absolutely wonderful. I made up my mind then and there that I had to find it the next time I went grocery shopping.

That day came for me earlier this week. I found the cheese right away, in a brick, for close to $6.00 for a half pound. I'm cheap, so this wasn't acceptable. Eventually though, the person helping me shop discovered the same cheese, pre-sliced, for about half the price. Needless to say, I picked up both pepperjack and the chipotle.

Tonight, I wanted to try an experiment. I've been eating potato bread lately, mostly because I just love the way it tastes. So, I slapped a slice of cheese, (I don't know whether it was the pepperjack or the chipotle), between a couple slices of bread and threw it onto my George Foreman grill. A couple minutes later, I bit into the most incredible grilled cheese sandwich I've ever had. The flavor of the cheese really added to the bread, and the combination was incredible! So, that's my story about cheese.

Whatever the kind of cheese, the best cheese in the known universe is Bothwell Cheese, a Manitoba product. My apologize to an Wisconsinianizians who may feel otherwise, but there you go. Now excuse me while I cut the cheese.

Spicey cheese is great! Yummy. We got some English cheddar at Whole Foods yesterday and it is sooo good. I had a chunk of it for lunch.
