Your dinner sounds amazing. Fwiw, here's one of my favorite things to do with rice. Instead of adding 2 cups water, add 1 and 3 4th cups chicken broth and 1 4th cup lemon juice. Voila! Lemony rice. When I've made this, I cook regular rice for 20 minutes. I think the acids in the lemon juice make this cook faster, so if you do it for 20 minutes, it will be mushy. So, I usually cook it for 18 minutes, and it's great. Just thought I'd share.
